Raisin Bran Muffin Recipe

Woo! Carbs are getting pretty high over here! Sometimes, it’s hard to get those in. I came across this old recipe of mine the other day, so I thought I would repost it. If you’re an old lady at heart like me or if you just want to try something different (and super convenient) for breakfast, check these out.

Cassandra’s Raisin Bran Muffins

Ingredients

  • 1 1/2 c All Bran cereal, pulverized with blender
  • 1 c old-fashioned oats
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 c coconut oil
  • 1/2 c honey
  • 1 tsp vanilla extract
  • 1/2 c raisins
  • 1 c skim milk
  • 4 large egg whites

1. Preheat oven to 375 degrees.

2. Combine all dry ingredients in one bowl. Set aside.

3. In second bowl, whisk together oil, honey, egg whites, milk, and vanilla.

4. Add the wet ingredients to the bowl of dry ingredients, and mix. The batter will be fairly wet for this recipe, but I promise the muffins will taste yummy:)

5. Mix in raisins.

6. Distribute batter among 12 cupcake liners. Bake for 20 min. Allow to cool completely, then enjoy!

Macros per muffin: 151 cal (3.6 g protein, 5.2 g fat, 25 g carbs, 2.1 g fiber)
