Macro Friendly Mac and Cheese Recipe

For those times when you want a healthier version of your favorite comfort food. Optional: Top with buffalo chicken or barbecue beef.

Ingredients:

•8-oz box of Banza (chickpea) pasta (I like the cavatappi.)

•12-oz bag riced cauliflower

•1 c reduced fat cottage cheese

•3 TBS ghee (Or butter, light margarine, etc.)

•1/4 c all purpose flour

•2 c skim milk

•2 1/2 c reduced fat fiesta blend shredded cheese

Directions:

1. Boil pasta in salted water for 8 min. Drain and rinse with cold water.

2. Microwave riced cauliflower for 5 min. Cut top to allow excess steam to escape and set aside.

3. Meanwhile, melt butter on medium heat in pan and stir in flour to make roux.

4. Add milk and shredded cheese to roux. Heat and stir until cheese is melted.

5. Stir in cottage cheese. Heat for a couple more minutes.

6. Mix in cauliflower and pasta.

7. Weigh out 1/8 of recipe and enjoy!

Macros per serving (out of 8): 290 calories, 19.9 grams protein, 12 grams fat, 26.4 grams carbs, 3.6 grams fiber
